when doing the cation and anions tests, how do i know that some solution dissolves in excess or not? what dissolves in excess the precipitate?

It is the precipitate that dissolves in excess ( you are right). I am a teacher of chemistry and have been teaching for 6 years now. Let me know if you need tutions.
